Prepared from a boneless leg muscle. The muscle must be 100% fully denuded from all trace of ligament, silver membrane and fat. The cleaned muscles are then sliced perpendicularly between 1/8" to 1/16" thick to the meat grain and proportionned to 115g before being breaded. The chop must be tenderized and hammerred. Classified to fulfill the market's needs.
