Excellent for Deli Counters and Re-therm for Health Care (Heat & Serve)
Combi-Oven: No cover required. Set oven to heat and steam to keep perogies moist. Use a temperature probe to achieve proper internal temperature. Approx. 20 minutes. Cold Plating for Re-Therm: Place 4 tempered perogies on a plate with a vegetable or a cabbage roll. These will provide moisture and prevent perogies from drying out. Cover with lid and re-therm in your standard cycle. Bulk Re-Therm: Place the tempered pan of covered perogies - give pan a shake before placing in the oven to mix the onions and buttery oil around the perogies - directly into the bulk re-therm oven for 50 minute cycle at 135 C.
